	Creating a premium food service 2007 Nuffield Scholar - PAUL KELLY - studied 'How to create a premium retail food service market' As part of my Nuffield Scholarship studies, I have travelled to North America and mainland Europe visiting not only companies within the food service sector, but within many other industries, including fashion and electronics. My mission was to explore ways of encouraging food service buyers to put a value on provenance, as well as putting local quality food into the mainstream menus of today's food service sector. Food and farming is such a fantastic business to be in. Through my Nuffield I have been able gather so many new ideas it has made me realise that the opportunities are endless, almost overwhelming! "My Scholarship has provided me with a fascinating journey that has made me think outside of the agricultural box that we all tend to get locked into."

	Kelly's Turkeys has been around since 1981, when the company was set up by Derek Kelly and his wife, Mollie. These days, Derek's son Paul Kelly is head of the operations and as turkey-mad as his father. The idea was, and still is, to breed rare bronze and black turkeys for the British and Christmas market.
